My advice is rather than try and read the docs like a book that you decide what you want to do on your site and search the on how to do that in Joomla. Many of the older docs contain information about techniques that are relevant in J5, even though the menus are different.
Another way is to click the Help button in Joomla admin that will give insight into the admin page you click from.

Another good way is to install Joomla on a test site and install sample data into it. Wamp localhost is a good test environment.
